the great caper

So, I’ve said before that Neal likes capers, so when I saw this recipe for Chicken Scallopine on PW’s site, I knew I had to try it.

It was very similar to the chicken piccata I make, but with addition of mushrooms and a much lighter sauce. The recipe called for heavy cream in the sauce, but I skipped that part since Neal is mildly lactose intolerant and I didn’t feel like hurting his tummy.

Overall, the dish was really good! The recipe had it served with linguine. I asked Neal if he was OK with that and I got a thumbs up. I think it went well with the light sauce and the mushrooms. Yum!

I’m not feeling so good this week. I can feel the beginnings of a sinus infection rumbling in my head (Grrrrrr)… so I’m just trying to get through the week. All I want to do is sleep!  I can’t wait to lie in bed all morning on Saturday! Neal and I are going to a party for the Final Four championship (you know, that basketball thing) on Saturday and I’m excited because I have a fun treat planned! Yay!

Cross your fingers that my immune system holds off this cold!
