So, every time I see a fish recipe, I get sort of jived to make fish.
Cooking a fish dish makes me feel cool. Healthy. Hip.
I’m usually none of those things.
So I found a recipe for parmesan crusted tilapia. I grabbed two filets at the store and modified the recipe slightly. I mixed equal parts bread crumbs and grated parmesan. I then dipped the filets in flour, then in a beaten egg white, and then in the parmesan mixture. I baked it at 400 degrees for about 15 minutes.
I also mixed up a cream sauce that I just kind of threw together. I mixed some sour cream, cream cheese, lemon juice and parsley.
Now, I’m not saying it wasn’t good. But everytime I make fish, I’m reminded that I’m just not a big fan of fish. It sucks. Every time I make fish, I feel so good about it. Then I eat it and I’m like “meh.”
But I still took a picture for my blog fans, HAHA.
I made it with some roasted potatoes and edamame. And the sauce I made was really rich, but good with the fish. So I don’t know. Maybe I’ll try fish again in a couple of months and see if I’m over my weird fish thing yet. What’s wrong with me?
