Comfort food

One of Neal’s favorite foods is lasagna. And for some reason, I never make it.

I think the last time I made lasagna was in college. Andi and I told our neighbor that if he didn’t smoke cigarettes for a month, we’d make him a lasagna dinner. He cheated a little, but he was nice and cute, so we made him lasagna anyway. That was met with loads of outrage from our boyfriends, Shawn and Neal. “We don’t smoke at all! Why can’t we have a lasagna dinner!?” So, Andi and I got into a little trouble with that one. I think we wound up making two lasagna dinners, HAHA.

So, I asked Neal Saturday what he wanted for dinner. As usual, he shrugged. I said “Well, I was thinking of making lasagna tonight or tomorrow.” That caught his attention quickly and he said “That would be good! That would be good tonight!”

So, I set on a quest to find a really good recipe. One of my favorite things to do on a Saturday night is to cook a rather elaborate meal. I really wanted to make lasagna from scratch. I looked on allrecipes.com and found this recipe as the highest rated. I omitted the sausage, since Neal turned up his nose at that and just used all lean ground turkey.

And oh boy, when I smelled the sauce simmering on the stove, I knew this was going to be good.

Seriously, I think this is the best meat pasta sauce I’ve ever had. I’m glad I have leftover sauce for some spaghetti this week. I’ll sure be making this again.

I wasn’t happy about the finished pictures, mostly because I think lasagna is hard to take pictures of. It just looks sloppy. But oh boy, this was so incredibly delicious. I’ll definitely, DEFINITELY be making this again.

Yum, Yum, Yum. And luckily, there are leftovers for me to take to work this week for lunch!

    That looks delicious! You better watch out if you take it to work, because you know Tad will try to steal it! Funny thing is, Dad made a vegetable lasagna last night, too. Luv ya.
