manic monday

So, I came home from work today, walked in the door, and promptly stepped on our tree skirt.

I told you Ferris has an unnatural obsession.

Anyone that knows my house knows that after somehow dismantling the fabric from the tree stand, he had to drag it up a step, through the kitchen and through our living room to the front door. Now, our house is not big, but that’s still a long way for a cat clutching a boatload of fabric in his jaws.

*Sigh*

So, I haven’t really been inspired to make any dinner dishes lately. It’s around the holidays, so the only fun recipes are dessert recipes. However, I scrounged up a recipe I had starred in my Google Reader for Parmesan Dijon Chicken and decided to give it a try. Basically, I spread dijon mustard on chicken breasts, rolled them in grated Parmesan, seared them in a pan on the stovetop and then threw them in the oven for about 30 minutes.

I was really happy with the crust on the outside, and they tasted really good! They stayed really moist and the mustand was not overpowering.

And I’ve been on a twice-baked potato kick lately. I never realized that they are actually really easy, just sort of time-consuming. I use Lawrys Seasoned Salt, which everyone should have in his/her pantry, to really give the filling flavor. I also use butter and sour cream.

I love when they get a nice crust on top. Yum!

Right now, Neal’s in the basement and weird noses are coming through the door. I’m wondering if he’s been swallowed by the massive piles of useless crap we have down there, which includes Neal’s binders from middle school, a dusty elliptical machine I just had to have once upon a time, a moldy fish tank, and my wedding dress balled up in a bookbag. Yes, I’m a horrible, horrible person.

Maybe I should go check on him…..

OH, nevermind. Neal just emerged from the murky depths with a sweatshirt I haven’t seen for a couple of months, gloves I thought were lost forever, and his leather gloves I bought him the first Christmas we were dating.

Yeah, the only reason he was down there was because he had to clear a path for the water man to come to change our water meter. Notice the words “clear a path.”

Yes, we’re hopeless.
