So, I’ve made some stuff last week/weekend/this week and haven’t gotten a chance to post about it yet.
First, Neal and I like to get Purdue’s Oven Roasters at the grocery store. They are soooo easy and not too expensive. You get so much meat out of them. I like to put mine on a bed of onions, carrots and other veggies in the crockpot. I sprinkle on some seasonings (my favorite lately has been pepper and Lawry’s Seasoned Salt). The chicken cooks all day in the crockpot. The fat melts and creates a great broth and the chicken falls off the bone by the end of the day. Yum.
It is sooo easy and sooo good.
There’s so much meat left, so I pick it all off once it cools and use it in sandwiches, quesadillas, etc for several more meals. Economical!
I’ve been wanting to try this recipe for Chicken Spaghetti casserole, and I knew the leftover chicken from our oven roaster would be perfect. So when my friend Amanda and I got together last Thursday, I asked if I could cook it. I knew she’d say yes.
It turned out really well. I didn’t use pimentos, and I didn’t have any cayenne pepper, so I just omitted those ingredients, plus I didn’t add as much chicken stock because I wanted it thicker. I might tweak it a little more next time, but overall it was good. It made a ton, but was good leftover.

And I finally made some bread in our bread maker we were given from my parents’ friends. I really wanted to make wheat bread, so we spent most of Sunday breathing in fresh-baked bread. Yum!
A couple of other things. We had this really crappy timer that we could set so our outside lights would turn on at night and go off in the morning. It didn’t work really well and finally broke. It was ugly looking anyway, so Neal went to Lowe’s and picked up a new fancy timer for us and installed it himself.
It’s great! It’s got a sensor that senses when it’s dusk and when it’s dawn and shuts off accordingly. We had to reset the old one all the time because it just went by time. Seeing as our wall clock in our living room is still an hour behind from spring daylight savings… it’s clear we weren’t so good at keeping up with that.
Oh, and Neal and I recently bought a huge block of Muenster cheese to take with us to a family gathering. We bought it and I opened it up the next day to cut up. The entire thing was coated in mold! Ugh! I wouldn’t have been able to notice through the wrapper, but I usually don’t study my cheese to make sure it’s moldy. The expiration date was months out, so it was packaged incorrectly. The block was about $6, which I know isn’t a lot of money, but heck, that’s two boxes of cereal! So Neal called the customer service number, and about two weeks later, we received this check in the mail!
It came with a personalized note apologizing for our “muenster cheese” experience. Now THAT’S customer service! Thanks… Great Lakes Cheese Co.!
