So, I was hungry for cookies Tuesday. Like really hungry for some sort of cookies.
I saw this recipe online for Peanut Butter and Oatmeal Chocolate Chipsters and decided to give them a try, because I knew I had the ingredients at home, most importantly the oats, peanut butter and chocolate chips.
The recipe calls for 3 cups of oats, and I only had about two and a half. I added a little more flour, but I think my shortage of oats was the reason the batter was not quite stiff enough. Either way, it was close to being the best cookie dough I’ve ever had. Like seriously, I completely spoiled my dinner.
The recipe called for one cup of peanut butter which seemed like a ton to me, but fortunately this made a lot of cookies, so that cup was spread out.
I refrigerated the dough a little, because it was so wet. When baking, the cookies flattened a little more than I liked, probably because of not having enough oats.
Still, these cookies are seriously delicious. The cinnamon and nutmeg really add a lot, and would make this a great holiday cookie. The spices make it sort of fancy, HAHA. The peanut butter flavor is not too strong, just gives the cookies a little boost.
This recipe made soooo many cookies. I took a whole container into work and 3/4 were gone by lunchtime. I got a lot of compliments on them, and Neal approved as well.
I’d like to try them again, when I have the right amount of oats. We have to finish this batch first, though, HAHA. If you’re hungry for cookies, stop by!
