So, I’m obsessed with the Olympics. I am so freakin’ exhausted this week because I have been up so late watching the Olympics EVERY NIGHT. It’s ridiculous. I’m obsessed with Michael Phelps and the men’s gymnastics team. I do have a stud for a husband at home, but he can’t do a pommel horse routine.
So that’s why I haven’t blogged until today. This week as been busy anyway. I had my last haircut with my beloved hairdresser before she moves. I’m upset.
Today, I ran out to get fitted for my bridesmaid dress for my brother’s wedding. It’s so gorgeous and I can’t wait to wear it!
OK, so I have had a couple requests for recipes, so I’m going to start with the easiest meal I make, and make often.
Meatloaf.
OK, so a lot of people don’t like meatloaf, but I’m telling you, this is sooooo good, you won’t think of meatloaf the same again. I got this recipe from a Kraft Foods magazine and have changed it only slightly.
Here’s what you do. Take two pounds of ground meat (we use lean turkey, but lean beef is fine as well.) Put the meat into a bowl. Add two beaten eggs, 1 cup water, 1/4 to 1/2 cup ketchup, and a bag of Stovetop chicken flavor stuffing (I use the low sodium or whole wheat). Then mix that up. It’s much easier to just get your hands in there. Then spray a 13×9 pan with cooking spray. Shape the mixture into a loaf and put it in pan. Top it with about a half cup of ketchup and stick in a 375 degree oven for one hour.
I’m telling you. It’s amazing. Moist and yummy. And soooo easy. I mean really, who can’t mix together a bunch of stuff in a bowl, plop it in a pan and stick it in the oven? (Mumf, that means you, hehe).
So, I made meatloaf tonight and some garlic roasted mashed potatoes to go with it. That might sound difficult, but I swear it’s not. Here’s how to make them.
Take two or three garlic bulbs (I usually always have some on hand. I put garlic in everything). Cut off the top 1/4 or 1/3 of the bulb, exposing the cloves, like this:
See? OK, then wrap the little bulbs in foil and make cute little garlic foil packets.
Then stick them in the oven. I would try to make the oven 400 to 425 degrees. Leave them in there for an hour. You’ll smell them when they’re ready.
When you take them out, they’ll look like this:
OH, if only you were in the kitchen with me when I unwrapped these bundles of creamy, garlic-y joy. Nothing smells better than roasted garlic.
They are going to be really hot, but when they cool a little, take the bulbs and squeeze out the cloves, which will now be like pulp.
Seriously. The Smell. There are no words.
So, put the garlic in the bowl, with about 5 boiled potatoes. I mix milk, butter, salt and pepper to taste and texture, so I don’t really have any measurements. But I probably use half a stick of butter and half a cup of milk.
And you get this:
Yum. So make this tonight. Or this weekend. But you have to make this meatloaf and mashed potatoes. You can thank me later.

We recently gave the cats more of the their favorite toys – puff balls. We’ve been trying to ration them. Here’s Simone with her favorite toy.
Isn’t she cute? We usually find bits of these little puff balls all over the house. That’s not so cute.
So, we aren’t going to the in-laws anymore this Saturday, because something came up for them. So I’m trying to get Neal to agree to go to Ikea. I love Ikea. And I really want this one bookcase…
