So, on any given day if you drop by my house, you’ll see a lot of wires. Those wires are attached to our laptops, that seem to find themselves left all over our house. I usually keep mine in the living room, on the coffee table. Neal takes his to work with him everyday, but it’s usually left out somewhere on the kitchen table. I can never keep proper dining room table decor b/c he pushes it aside for his computer. Harumph.
Anyway, we’re kinda computer freaks here, mostly because of Neal. He’s a programmer, and I think he understands computer language better than human language, HAHA. I give my husband a hard time a lot, and tease him, but I’m honestly amazed at what he knows about computers. (Don’t tell him I said that.
)
I think our cats must have inherited this obsession with computers. I posted a pic recently of Ferris leaning against my laptop while I’m typing. Well, he does that to both of us all the time. It’s like he can hear the whirr of the fan in our laptops and comes running.
HAHA, isn’t he funny? And he jumped up on the table all by himself and curled up between Neal’s arms, and between Neal and his computer. Sometimes he walks on the keyboard, which makes Neal angry.
But anyway, I like to think they just want to be with us, but maybe they just like the heat of the computer, HAHA. Who knows.
I ran to the dollar store today to get a second of these large frames they had. While there, I glanced at some doormats and thought one would look perfect in front of our sliding glass doors in our kitchen, next to our new curtains.
I brought it home and set it down on top of the old one. I just wanted to see how the colors worked.
The cats wasted no time making it theirs.
HAHA! Seriously, I put it down and they were sitting on it in .5 seconds. But anyway, I love the colors. The blue in the mat almost perfectly matches the blue on my curtain border. Yay! And it was only $5!!!
Anytime Neal and I eat at a Mexican restaurant, I get chimichangas. I LOVE them. So I saw a recipe online and decided to try them myself, sans frying. I am deathly scared of frying. #1, I don’t want to die from high cholesterol and #2, I don’t want to burn my house down.
It wasn’t hard, but there were a lot of steps to making these. I had to make the chicken filling, make the green sauce for the top, cut up the jalepenos and tomatoes to make the pico de gallo. Jeez. But the end result was very satisfying. (Funny note. my spell check doesn’t like jalepenos and wants me to change it to pentecostal, dependable or penologist. What’s a penologist? HA!)
Neal LOVED them. I mean, really loved them. He said, and I quote, “This is the best thing you have made in a while.”
This is AFTER his chicken with capers dinner he loves so much. That’s sayin’ a lot!
So I was pretty shocked at how much he liked them. They were really good. The green sauce was a little spicy, and then the pico de gallo (that’s the salsa-like stuff) was hot, too. My mouth is still tingling a little. Oh, and those are refried beans on the side. We love them so much, we buy it by the case at BJ’s, HAHA.
So, I’m not sure if I’ll make these again really soon, because they were a lot of work, and a lot of ingredients, but boy were they good. And we have plenty of leftovers!
I’m so stoked for this weekend. Jodie’s wedding is going to be great. I can’t wait to see her walk down the aisle and marry a seriously great, awesome guy. And I’m excited to drink a lot of wine.
